Vanessa embarked on a live aboard dive vacation in the Red Sea. The experience inspired her to abandon life in the culinary industry and set her course for new horizons. She spent many years in the restaurant industry in countries around the world, from South Africa to Central America to Europe. She successfully owned a coffee shop in the heart of prestigious London-Marylebone Lanenever, but gave it up to follow her passion for life at sea.

Vanessa has always loved the art of cooking. Her Mother was her first inspiration, teaching her as a child to create dishes to please. Her family and friends were foodies. Everyone in her circle was keen on experimenting with new ideas and sharing recipes. Traveling the globe, she became adept at incorporating new ingredients and methods into her menus. Guests rave about her cooking, which is always fresh and innovative. She can also delight the palate of guests on restricted diets, such as vegan or gluten free. When not in the galley, she enjoys a range of high-energy sports, hiking, skiing, river rafting, kayaking and scuba diving, and enthusiastically shares tips and talents with her charter guests. Like Roland, Vanessa is also a qualified Dive Master taught to lead dives in a commercial environment, so charter guests have the benefit of two Dive Masters if they wish to scuba dive!
